Preheat oven to 200°C / 400°F.Combine olive oil with honey,white wine vinegar, lemon juice,oregano,chilli flakes in a bowl.Place the cherry tomatoes in a baking tray. Sprrinkle with the prepared white wine vinegar,olive oil, honey and add unpeeled garlic cloves and finely chopped onion.Toss and mix well.

Place the tray in the oven and bake for about 30 minutes or until the cheese is golden brown and the tomatoes start to char,shrink and release their juice. Remove from oven.Squeeze each garlic clove out of its skin with a fork and mash them with oil.Spread the tomatoes in a serving bowl and sprinkle with white wine vinegar,olive oil and the released juices.Place the burrata on top.Finish off with freshly ground black pepper,red chilli flakes, oregano,chopped basil leaves and salt.

Sprinkle 1 tbsp more of prepared white wine vinegar and olive oil glaze on top and serve.

Serve with some toasted crusty crostini and enjoy!
