Steamed Cauliflower with Red Curry and Tzatziki

I'm sharing this dish from which you can learn 3 different preparations: Tzatziki (the white sauce), red curry, and steamed or boiled cauliflower. It's not necessary for the cauliflower to look like this, as it requires technique and practice. If it's more convenient, you can prepare it with the florets already separated. These flavors combined create an amazing taste experience. This is a perfectly vegetarian dish with a slight spicy, sweet, salty, and umami touch. The recipe is intended to be shared between 2 people, depending on the size of the cauliflower.
Steamed Cauliflower with Red Curry and Tzatziki

Cooking Instructions

Clean the cauliflower and remove the leaves.

Steam the whole cauliflower at 160°F for 15 minutes. Alternatively, boil it in water for 5 minutes.

(THIS STEP CAN BE DONE WITH THE CAULIFLOWER ALREADY SEPARATED AS IT REQUIRES A LOT OF TECHNIQUE.) Once cooked, carefully separate the florets without breaking them using a small knife (do not let the cauliflower cool, or it will break). Once separated, try to press them back together into a cauliflower shape with your hands. (THIS STEP IS NOT MANDATORY, IT'S SIMPLY FOR AESTHETIC PURPOSES.)

RED CURRY: Sauté everything except the tomatoes, coconut milk, and curry paste over low heat.

Once well softened (without browning), add the curry paste and tomatoes, and cook until it thickens slightly.

Add the coconut milk, bring to a boil, blend, and strain. Finally, adjust the taste with salt.

TZATZIKI: Peel and chop the cucumber into small pieces, removing the seeds from the center. Chop the mint as finely as possible and grate the garlic.

In a bowl, pour the kefir and stir with a whisk. While stirring, add the mint, garlic, lemon juice, salt, and pepper, integrating the ingredients well.

Finally, add the cucumber and mix gently to avoid releasing excess water.

I found this recipe on YouTube from RinS CookBook. I used Mae Ploy Red Curry Paste as recommended in the video. I'm not a big fan of bamboo shoots so I added snow peas later in the recipe instead.
