Steps

Make batter as per the ingredients by taking the handvo flour in a big bowl. Add sour curds, oil, cooking soda & Lukewarm water slowly. Mix to thick batter. Leave it to ferment overnight. The next morning, the batter would have fermented very well.

Now add all the veggies, chopped methi, dry masalas, powdered jaggery & salt. Mix very well.

Add 1/2 the tempering & add in the batter.Also add eno fruit salt in the batter.put 2 tsp water on it. Bubbles will come on the top.Mix gently.

Tempering : Now take oil in a non-stick pan add mustard seeds & asafoetida Saute.Add sesame seeds & curry leaves. When everything splutters add 1/2 the batter. Cover & cook till the lower part becomes golden.

Flip & cook the other side covered. Remove & serve hot. You can serve Handvo Pancake with buttermilk or tea or coffee.
