White Chocolate Oatmeal Cranberry Cookies

Cooking Instructions

Preheat oven to 350F.

In a large mixing bowl, cream the butter and sugars together until creamy. Mix in eggs one at a time, then mix in the vanilla.

In a separate bowl, whisk together the flour, baking soda, cinnamon and salt.

Add flour mixture to the butter/sugar mixture and stir until well combined.

Stir in oats, cranberries, pecans and white chocolate chips.
- 6
Drop about a tablespoon of dough onto ungreased cookie sheet for each cookie leaving 2 inches of space between each mound of dough.

Bake for approximately 10-12 minutes or until cookies start to brown around the edges. Cool on a cooling rack.

I blended 2 recipies because I liked the taste better of one but did not have butter on hand - actually had earth balance organic coconut flavored spead from a food give away I was told to use in place of shortening - and I don't care for nutmeg much but love vanilla .... Hope you enjoy these as much as me & my family do.Also, this turned out great when I doubled it not thinking ahead of how much the end result was because I didn't read ahead as I was baking. LOL. Saw someone on TV making these but this is the oatmeal cookie recipe I always use. Chopped pecans would be a good addition and you can add more chocolate chips for an extra rich cookie. I like to pull these from the oven when they are a little under done. I think they stay chewier. I used a 1/4 cup size scoop and made 30 cookies. poconolady -
