Heat 2 tbsp of the vegetable oil over high heat. Add the garlic and roast for 20 seconds. Throw in the onions and the green chilies. Roast lightly.

Add 2 tsp kashmiri chili powder, 2 tsp chili flakes. Add the tomato and stir-fry for half a minute or until the tomato just starts to break down. Add the cabbage and carrot and stir-fry for 20 seconds to wilt slightly.

Add the rice. Throw in 2 tbsp fish sauce, 2 tbsp soy sauce, 1 tbsp dark soy sauce. Add the 1 tsp sugar, 2 tsp pepper, and 1 tsp vegetable stock powder.

Stir-fry until the rice is evenly coated and heated through. Then push the rice to one side of the pan. Add 1 tbsp of oil into the empty side. Pour the egg into the oil. Use your spatula to spread it out as it cooks. When just set, toss the rice and egg together. Turn the heat off and toss through the coriander and spring onions.
