Foxtail Millet is an annual grass grown for human consumption and is the second most widely planted one.
Foxtail Millet is rich in Vitamin B12 which is essential for maintaining a healthy Heart and the smooth functioning of the Nervous system. It is also good for Skin and Hair. A diet consisting of this versatile Millet will improve the glycemic control and thereby results in lower Insulin levels in the body.

Being a powerhouse in nutrition, it helps keep up the stamina. It keeps one stronger and builds immunity in order to fight the disease causing organisms and various infections lurking around. I have added Apple to this recipe for natural sweetness and flavour. Both of these go really well with each other and the result is this beautiful looking Halwa or Porridge with lots of nutritional goodness. Millets are good sources of Fibre as well.

Ingredients

25-30 minutes
6-7 servings
  • 1 cupFoxtail Millet
  • 2cubed Apples
  • 3-4 tbspHomemade Ghee or Clarified Butter
  • 10-12Almonds
  • 10-12Raisins
  • 1/2 cupPalm Jaggery
  • 400 mlfull fat Milk

Steps

25-30 minutes
  1. 1

    Wash and rinse the millet first and then soak in clean drinking water for a good 4-5 hours or better still overnight.

  2. 2

    Heat ghee in a kadai. Fry almonds and raisins or any of your favourite dry fruits and nuts. Now add the cubed apples. Saute on a low until they cook well and are soft. Now add the soaked and drained barnyard millet. Also add milk as needed. Cover and let it cook.

    Add sugar or jaggery powder as desired after it's fully cooked and done. I have added palm jaggery to it. Mix well. Roast on a low to medium high heat until it gathers in the centre and leaves the sides of the kadai. Add a teaspoon of more ghee. Take it off the heat.

    Garnish with more of chopped nuts or dry fruits. Serve warm or cold. Enjoy!
