The spices and the recipe for these large cookies were brought into Holland from the Philipines, sold with the name taai taai at Christmas markets in Amsterdam before 1578. I googled it. The word might come from the Philipino Tagalog word tae tae.
Cookies are made in the shape of single eligible bachelors and single bachelorettes to be given to each other so they had a lover for the Holidays. The mold pictured in this recipe is a medieval bakery museum mold. The cookie dolls are 9” tall.
We draw the boy and girl doll shapes on parchment paper, then cut the rolled dough by hand.

Ingredients

24 hour dough, 30 min prep, 12 min bake
4 people, 8 cookies
  • 1 cupbrown sugar
  • 1/2 cupboiled warm honey
  • 1/4 cupwarm water with the dissolved spices and baking powder
  • 2 1/2 cupslight rye flour
  • 1 1/4 cupdark rye flour
  • 2 Tbsground star anise seed spice
  • 1 Tbsspeculaas spice
    California Farm Sugar Free Speculaas Cookies
  • 3 Tspbaking powder
  • 1 Tbsneutral vegetable oil like grapeseed or sunflower
  • 1/4 Tspseasalt
  • 1large fresh farm egg, beaten
  • Equipment: baking sheet, parchment paper, flour dusted board
  • Cost: honey $1, sugar 50 cents, flours 50 cents, spices, other $1, egg 20 cents, 40 cents per taai taai doll cookie

Steps

24 hour dough, 30 min prep, 12 min bake

    Boil water with spices, add honey, sugar and baking powder. When dissolved, Stir in light rye flour, salt and dark rye flour, cool, roll into ball on oil rubbed surface, rest two days at room temperature, covered.

    Next, roll dough out on floured surface in four rolls. A thin roll to cut the wooden shoes, two thicker rolls for the lower body and the upper body and a thinner roll for the heads. Slice 1/2” thick, make 9” long figurines. Use baking sheet with parchment paper or buttered surface. Preheat oven to 410F degrees.

    Boys have pants and wooden shoes, girls have skirts and wooden shoes. Brush figurines with beaten egg, put in preheated oven at 410F degrees for 14 minutes. Taai taai will be hard when baked but will turn soft, pliable and chewy. Stays soft and fresh in plastic bags for weeks. Enjoy.
