Spaghetti Carbonara with Zucchini

Cooking Instructions

Place the bacon in a pan over high heat (without oil) and let it brown.

Remove the bacon and add the chopped onion to the same pan. No need to add oil, it will cook in the bacon fat.

When the onion starts to become translucent, add the diced zucchini. Season with salt and pepper and let it cook well.

Once cooked, add the bacon back in and keep it on low heat.

Meanwhile, cook the spaghetti in another pot.

Beat the egg in a bowl and add the grated cheese and pepper.

When the spaghetti is ready, add it to the pan with the zucchini and turn off the heat.

Finally, pour the egg and cheese mixture over the spaghetti and mix well. You can also add a tablespoon of the pasta cooking water. It's important that the pan is off the heat so the egg doesn't scramble. Serve and enjoy.
