Pasta Maccheroni with freshly available Winter Vegetables like Leeks, Purple Cabbage, Cherry Tomatoes, both Green and Black Olives and Red sauce is something so unique and tastes absolutely right.
Be it for a healthy Brunch or a wholesome family Dinner, it is a winner hands down. This is one of the varieties of Pastas from Italy and looks like a long and thin pipe made from Durum Wheat Semolina. It is a generic name given to Pasta made from Durum Wheat Semolina and are generally long and short, ridged or even plain and are in all sizes. Basically they are named differently depending on their size and shapes.
Maccheroni Pasta is an ideal choice for the classic Mac and Cheese. It is ideal because of it's tubular shape and is enjoyed in many authentic Italian meals. It is low in glycemic index and therefore is a perfect choice for people for it's amazing source of energy. The best part is that it keeps you full.

Steps

25-30 minutes
  1. 1

Boil water with little salt and oil. As soon as it's vigorously boiling, add maccheroni pasta and cook until done. That's it. Drain and keep aside until use.

  2. 2

In a cooking pot, heat oil and saute onions and leeks with chopped garlic at first. After about 5 minutes of stir frying, add purple cabbage and both the olives. Saute all that on a low heat. After 3-4 minutes, add the cherry tomatoes.

  3. 3

Now add the paprika, half of salt, pasta seasoning and white pepper. Also add in the tomato sauce and cook on a low heat for a further 5-6 minutes or just until the veggies are done. Do not cook more as it is important that they retain the crunch.

Finally add the maccheroni to the pot. Mix well. Cover and let it just heat up for about 4-5 minutes. That's all. It's absolutely done. Garnish with basil or chopped parsley or coriander. Serve it piping hot right away. Enjoy!

Homemaker by choice and a passionate cook by heart. An aspiring cook who actually never knew anything about Cooking until i became a mother myself. With Motherhood came the responsibilities as well and this was the turning point in my life.I started to learn the ABC's of cooking, taking help from my mother and my MIL. And time just flew. I spread my wings higher and higher. With my love for excellence and innovation, i stepped into a world of homecooks with my exposure to Cookpad one fine day on the social media. And there was no looking back since then and i have not only shared recipes here on this wonderful platform but also have made some lovely friends as well. Today iam successful because of my hard work, dedication and loads of good wishes of my family and my kids in particular.
