Ingredients

6-7 hours
4-6 servings
  1. 750unsmoked gammon joints
  2. 2 tbspolive oil
  3. 1onion finely chopped
  4. 1large carrot sliced
  5. 1celery stick cut to small pieces
  6. 2bell peppers sliced (I used mixed peppers)
  7. 3garlic cloves, crushed
  8. 2 tbsptomato puree
  9. 2 tspsmoked papika
  10. 1 tsporegano
  11. 2bay leaves
  12. pinchchilli flakes
  13. 400 gtin chopped tomatoes
  14. 400 gtin baked beans
  15. mashed potatoes to serve (or home baked crusty bread)

Cooking Instructions

    First we soak the gammon in cold water for 3-6 hours. Rinse well.

    In a frying pan fry the onion in olive oil for a few minutes add the garlic smoked paprika stir well. Next, we add all the ingredients apart from the baked beans and transfer everything to your slow cooker.

    Place the gammon on top and pour 1/2 tin of water. Cover and set to required cooking time. (6-7 hours)

    When the stew is cooked, carefully remove the meat and shred into large chunks (I used a fork). Stir in the baked beans and shredded meat and simmer for 3-5 minutes. Enjoy your meal.
