Ingredients

  1. 4 cupsfresh green beans, ends removed (I used one bag French green beans)
  2. 4bacon strips, diced
  3. 1onion, diced
  4. 1 canCampbell’s Cream of mushroom soup
  5. Optional: 8 oz fresh mushrooms
  6. 1/2 cupmilk
  7. 1 cupfresh grated cheddar cheese
  8. 1 tspblack pepper
  9. 1 tspTony’s seasoning
  10. 1 tspgarlic powder
  11. 2 sprigsfresh thyme or 1 tsp of dried thyme
  12. French onions
  13. 1onion, thinly sliced
  14. 1/2 cupmilk
  15. 2 Tbsflour (or more if needed)
  16. Salt & pepper to taste
  17. Oil for frying

Cooking Instructions

    Wash & trim your green beans. Preheat oven to 350. Bring cold water to a boil & blanch green beans for 3 minutes, strain & set aside. In a pan or Dutch oven, cook bacon until crispy. Add onions & cook 5-7 minutes.

    Add seasonings, I also added about a 1/2 tsp of crushed red pepper flakes. Pour in cream of mushroom, milk and stir. Add 1/3 cup of cheese (I used white cheddar) and mix again.

    Add green beans and toss. Add to a casserole dish and sprinkle with remaining cheese. Bake in oven for 25-35 minutes.

    Heat oil in a pan over medium heat. Transfer onions to a bowl with milk, salt & pepper. Add flour and extra pepper if desired.

    Fry onions until golden brown, place on cooling rack to cool. Top casserole with onions when ready to serve.
