I always cook for my children—they are the source of my culinary creativity, and I try to let them experience new flavors starting from dishes they already enjoy. That’s how I came up with the simple idea of adding arugula to a classic mushroom risotto.

Add the chopped onion and olive oil to a skillet and sauté.

When the onion starts to turn golden, add the mushrooms and cook for a couple of minutes. Add the rice and toast it for a few minutes, then pour in the white wine and let it evaporate.

Cook for a few minutes, then start adding the broth a little at a time as it gets absorbed. Meanwhile, tear the arugula by hand and add it to the skillet along with the broth.

Continue cooking, seasoning with salt and pepper, until the rice is fully cooked and creamy, not dry. Serve with a sprinkle of chopped fresh parsley.
