Prepare a checklist. Keep the ingredients near the cooking area.

Add 6 cups of water and soak the urad, fenugreek, and rice; soak for at least 6 hours. I soaked it overnight. Strain. Grind the rice, urad and fenugreek seeds in a blender adding enough water. Make a a smooth soft silky batter with flowing consistency,

Take both jowar and wheat flour in a bowl. Steam cook the flours without pressure for 15 minutes in a cooker just as you would steam cook idlies. Take out and dissolve in 3 cups of water. Grind this along with the batter in the blender/grinder. Transfer the dosa batter to a large bowl, add yeast and mix it together with clean hands Keep the batter in a warm place. Batter will ferment in 4 hours. Add required salt and mix together.

Keep the skillet on medium flame, after heating, apply oil. You may cut an onion into two halves. Dip the onion half in oil and use it for greasing the skillet. This will make dosa aromatic. Make a dosa out of 1 cup of batter. Use a ladle and make a thin round dosa. Spread a tablespoon of oil over the dosa. Roast for a minute, Flip and roast the other side. Both sides should be golden brown. In 2-3 minutes the delicious nutritious aromatic Dosa is ready. Transfer to a serving plate.

Always taste before serving. Dosa can be eaten hot or cold. Serve with sambar, chili powder, or chutney. Jam can be served along with dosa for kids
