Homemade Salted Butter

There's no measurements for this recipe. It's really easy to do with only 2 ingredients needed. You can add other ingredients such as herbs and garlic, but I prefer to keep it simple. I used about 900ml of double cream for this recipe.

There's no measurements for this recipe. It's really easy to do with only 2 ingredients needed. You can add other ingredients such as herbs and garlic, but I prefer to keep it simple. I used about 900ml of double cream for this recipe.

Whisk the double cream on high for 10-15 minutes. Blend until the butter has separated from the liquid.

Strain the butter in a sieve over a bowl. The liquid is now buttermilk and can be used for other recipes. Store the liquid in the fridge.

With thoroughly clean hands, press the butter over the sieve to remove as much of the buttermilk as possible. The butter will be really soft but should hold its shape.

With ice-cold water, rinse the butter to remove the remaining liquid. Then, press again between your hands to remove as much of the water as possible.

Mix in well the sea salt to taste. Then, transfer to a container and sprinkle with more sea salt if desired. Store in fridge for up to 3 weeks.
