Chicken tzatziki and sweet potatoes

Nice crispy chicken and delicious tzatziki sauce full of shredded cucumber. So quick too! Seen here served with a simple tomato. Cucumber olive feta salad. Can also serve with rice.

Nice crispy chicken and delicious tzatziki sauce full of shredded cucumber. So quick too! Seen here served with a simple tomato. Cucumber olive feta salad. Can also serve with rice.

Preheat to 450

Mix all herbs and 2tbsp oil oil in bowl. And chicken and mix

Mix 2tbsp olive oil and salt n pepper and add sliced potatoes
- 4
Cover baking sheet with tin foil and rub cooking oil. Spread the chicken and potatoes over the pan.

Bake for 20 min. Turn up heat to max and bake for 5 more minutes or until crispy

While baking. Shred cucumber. Dry with a paper towel or sauce will be runny. Mix yogurt, a bit of garlic powder, pickle juice and dill in a bowl. Add shredded cucumber to make tzatziki sauce.

Serve with rice and add the sauce to side for dipping or over the meal.
