Cooking Instructions

Marinade the peels with soft side up, half an hour with sweet soy sauce, sweet paprika powder, white pepper, black garlic powder. Flip, marinade other side half hour. Dry and shred marinaded banana peels lengthwise with a fork or knife. Heat olive oil in cast iron deep skillet, fruit banana peels with onion and garlic, five minutes, till fragrant, soft and bacon colored. Taste a piece.

Soak, then boil garbanzo beans in coconut milk and curry powder. When beans are tender, add to skillet. Simmer the soup 20 minutes till flavors have integrated in the broth, then taste the broth how much pepper and salt to add, then cream with handheld mixer. Top with roasted banana chip croutons, garnish with chopped fresh cilantro, serve.

While preparing soup, roast banana flesh in airfryer by slicing and spraying with olive oil, roasting 30 minutes at 350F degrees. Serve in soup like croutons. Garnish with freshly chopped cilantro leaves.
