Cooking Instructions

Preheat oven to 350 degrees

Place chicken in roasting pan. Flip over and season bottom of chicken with salt, pepper & onion powder.

Flip bird back over (breast side up) and season inside of bird with salt, pepper and onion powder. Put 3 tbsp butter inside cavity. Add onion and rosemary to cavity.

Place remaining tbsps butter under skin of chicken, all over bird. Leave a couple tbsps and place on top of skin.

Tie legs together. Generously season rest of bird with salt, pepper and onion powder.

Bake chicken uncovered in preheated oven about 1 hour and 15 minutes, or until juices run clear and no longer pink at the bone. Temp should be 165 degrees with thermometer inserted at thickest part of thigh near the bone.

If chicken skin not completely browned, raise temp to 400 and bake an additional 15 minutes.

Remove from oven and baste with drippings. Cover with aluminum foil and let rest for 30 minutes before serving.
