  1. 1 1/2 poundsflank steak, thinly sliced against the grain
  2. 1/4 cupcorn starch
  3. 2 tbsolive oil
  4. 2 clovesgarlic, minced
  5. 1/4 cupsoy sauce
  6. 1/2 cupwater
  7. 2 tbsbrown sugar
  8. 2medium onions, sliced
  9. 1green pepper, sliced
  10. 1red pepper, sliced

    Slice the flank steak into thin strips. For the best texture, slice against the grain

    Toss them with corn starch until they're evenly coated

    Heat the olive oil in a skillet over medium-high heat. Add the garlic and sauté for about 30 seconds, just until fragrant.

    Add the steak strips and sear them just until they're browned on all sides. You don't need to cook them through; the slow cooker will take care of that.

    Whisk together the soy sauce, water, and brown sugar.

    Combine the sauce, browned steak, sliced onions, green peppers, and red peppers in the crockpot. Give everything a gentle stir to ensure the sauce covers all the ingredients.

    Cover your slow cooker and set it to cook on High for 4 hours or on Low for 7-8 hours.
