Vegetable curry and rice ❦

It is a Pakistani dish that every Pakistani family is familiar with when they gather for a healthy everyday proper meal. My sister helped me in comprehending this dish’s recipe with tasting the flavours throughout our cooking. We cooked it together. It comes out 2x as mouth watering as we intended to make it taste. Curries are a fav to Pakistanis as with the right amount of ingredients it is beneficial for one’s health as well.

My sister helped me in comprehending this dish’s recipe with tasting the flavours throughout our cooking. We cooked it together. It comes out 2x as mouth watering as we intended to make it taste. Curries are a fav to Pakistanis as with the right amount of ingredients it is beneficial for one’s health as well.

Cut all the vegetables into small pieces so it is bite sized and boil the peas.

Cut the tomatoes, onions and garlic cloves into small pieces after washing them.

Keep your soaked rice in warm water until the curry is ready to mix with it.

In a cooking pot add 2 tbsp of olive oil on medium heat.
Add in the garlic cloves and let it cook for a while. - 5
After that add your onions, sauté it for a while (2 mins). Then add the tomatoes in the same cooking pot.

In a separate pan stir fry the cutted vegetables and let it rest after the vegetables are fried.

Sauté the prepared gravy for it to move to adding spices in it.

Add the spices i.e black pepper, red chilli flakes, salt, chilli powder, kasuri methi and salan masala to gain a spicy and oily texture
Also, add corn flour for crispy texture to the vegetables. - 9
Mix the fried vegetables with your prepared gravy and sauté it for a while. Then add 2 1/2 cups of water and let it rest until the water is evaporated.

Cut extra amount of onions for your rice on the other side, separately add oil in another cooking pot for the rice and prepare the coriander leaves for the dish too.

Add oil and the onions in the cooking pot on separate burner (make sure you have put the iron on the bottom so the meal doesn’t stick at the bottom of the pot within) on medium heat and sauté it for a while. Add spices i.e salt and cumin seeds. Then add the soaked rice and water in the pot, prepare it for simmer and let it rest.

Add the peas at last in the first cooking pot you were making the gravy in.

After simmering take the lid off from the rice, check the bottom of the pot whether it has sticked to it or hasn’t and it is done.
