Prepare all the ingredients.

Marinate the pork strips with 1/2 teaspoon of the bonito soup stock powder and 1 tablespoon vegetable oil to keep the meat tender. Let it marinate for about 30 minutes.

Peel and julienne the ginger. Wash and slice the scallions. Trim the ends off the enoki mushrooms and cut them into sections.

Peel and julienne the carrot. Blanch the carrot strips in boiling water for 3 minutes to soften.

Sauté the ginger until fragrant.

Add the pork strips to the pan and stir-fry until about halfway cooked.

Add the enoki mushrooms and blanched carrot strips to the pan. Season with 1 teaspoon of bonito soup stock powder.

Stir-fry everything until fully cooked, then turn off the heat and remove from the pan.

Plate the dish and sprinkle with sliced scallions.
