For mushroom - wash button mushrooms and slice. Mince garlic and chop parsley and oregano leaves

In a pan heat oil and add minced garlic stir for 2 seconds, add sliced mushroom and stir to release moisture

Add chopped parsley and oregano and chopped green chillies, add salt and pepper and stir, set aside

Break eggs in a bowl and whisk well.

In a pan heat oil and add eggs, let it cook on low flame for 2 mins, add to a side the cooler mushroom, chopped oregano and chopped parsley, chopped green chillies and fold the omelette

Let it cook covered for 1 min, set aside

Serve with lettuce and cherry tomatoes and enjoy 😊
