Pre_heat your oven @180° and prepare your baking tin
Mix butter and sugar together till fluffy

Beat the eggs on a separate bowl, add the table spoon of vanilla essence.(This helps with the smell of eggs in your cake).

Add your beaten egg to the butter/sugar mixture and put together.

Add grated lemon rind and lemon juice into the mixture and mix.

Add your sifted flour and I tablespoon of baking powder bit by bit and mix together.

Add the 2 tablespoons of milk and mix properly

Put in your prepared tin and bake in your oven/jiko/ etc, for 45minutes.

It should be ready if your knife comes out clean.
