Shrikhand is a curd based dessert from Gujarati cuisine. I have made some changes and turned it into steamed shrikhand tart. Celebrate this Holi season with these 3 flavour Steamed Shrikhand Tart

For Crust, Take flour and butter in a mixing bowl. Mix well to crumble the mixture.

Add salt, sugar powder and water, knead a dough and rest it for 15 minutes.

Make 3 equal size balls from dough, roll out like poori, arrange in tart mould and bake on 190°C for 20 minutes.

For Shrikhand, Put thick yoghurt in a muslin cloth and keep this cloth on a strainer.

Tie the muslin cloth and keep for 1 hour. After 1 hour remove from muslin cloth, divide in 3 equal parts and transfer in 3 different bowl.

For Saffron flavour Shrikhand, add sugar powder, cardamom powder saffron soaked in 1 tsp milk and half of pistachios in yoghurt.

Whisk it with wired hand whisker till it becomes smooth.

For Rose flavour Shrikhand, add sugar powder and rose syrup in yoghurt and whisk well.

For Chocolate flavour Shrikhand, add sugar powder and cocoa powder in yoghurt and whisk well.

Transfer all 3 flavour Shrikhand in 3 separate greased bowl and steam in a steamer for 20 minutes.

After cooling, remove steamed shrikhand from bowl and put them carefully on crust.

Garnish saffron flavour Shrikhand with chopped pistachios and saffron threads.
