Steps

In a large bowl, scramble your eggs and set aside. Preheat your oven to 375⁰F.

In a cast iron skillet, heat 1 tbs olive oil, Sautee onion and garlic until translucent.

Add your ham and potatoes, stir to combine. Cook for another 3-4 min. Add your seasonings until combined.

Loosely Flatten your mixture in the pan and add your scrambled eggs.

Place a piece of tin foil over your skillet, and cook in your oven for 30-40min or until the potatoes are cooked through.
