Coconut curry chicken

So I'm at work winding down the hours when my mom calls. She asks where's the curry chicken I was to make yesterday. I said, "I was gonna make curry CHICK PEAS". She responds, "Curry chick peas? No I want curry chicken." lol. So here I am making some curry chicken. I added some sweet potato and carrots to make it a complete meal and served on a bed of rice.

Ingredients

  1. 1 poundchicken breast (skinless, boneless)
  2. 2 clovesgarlic
  3. 2 ouncesonion
  4. 2 ouncestomato
  5. 2 tablespoonsoy sauce
  6. 1 cupcoconut milk
  7. 2 tablespooncurry powder
  8. 1 teaspoonturmeric
  9. 1 tablespoonfresh grated ginger
  10. 3 tablespoonsugar
  11. 1 1/2 tablespooncoconut oil
  12. 4bay leaves
  13. 1 tablespoonlemon juice
  14. 1/2 teaspoonred pepper flakes
  15. 1/2 teaspoonsalt
  16. 1/2 teaspoonblack pepper

Cooking Instructions

  1. 1

    Dice chicken breasts. Season with salt, pepper, curry powder, and turmeric.

    Dice onions, garlic and tomato.

  3. 3

    In a blender, combine coconut milk, soy sauce, sugar, lemon juice and grated ginger.

    In a pan or skillet heat oil on high heat.

  5. 5

    Reduce heat to medium and saute onions, garlic, tomatoes and red pepper flakes.

    Make space then add chicken slowly, sauteing 5-7 minutes.

    Add coconut mixture and bring to boil.

  8. 8

    Add bay leaf, and continue to simmer.
