Fluffy Soft Omelet Rice (Omurice)

Even if you can't perfectly wrap a thin omelet or make a soft-cooked omelet, you can still make fluffy, creamy omurice with this recipe.
Recipe background:
My mother used to say that adding mayonnaise to omelets makes them extra creamy. You won't taste the mayonnaise at all.

Steps

  1. 1

Make the sauce. Heat the butter in a small saucepan, add the shimeji mushrooms separated into small clusters, and sauté. Add the water and bouillon cube, bring to a boil, then add the Hayashi rice roux. Simmer on low heat for a few minutes.

  2. 2

Make the ketchup rice. Cut the bacon into bite-sized pieces and finely chop the onion. Heat the vegetable oil in a frying pan, add the bacon and onion, and sauté.

  3. 3

Add the cooked rice to the pan, breaking it up as you stir-fry. Season with ketchup, salt, and pepper to taste. Once done, transfer the rice to serving plates.

  4. 4

Make the soft omelet. In a bowl, combine all the ingredients except the butter and whisk well.

  5. 5

Heat a frying pan over medium heat, add the butter, and once it's half melted, pour in the egg mixture. Stir gently a few times with chopsticks or a spatula.

  6. 6

When the bottom just starts to set, remove from heat and place the omelet over the rice. Pour the sauce around the omelet.
