Dorayaki with Branded Mark

I made dorayaki because I wanted to use the branding iron I bought in Kappabashi. The pancakes turn out fluffy and moist! You can easily make these at home. Just pressing on a branding mark makes them look super cute.

I really wanted to use the branding iron I got in Kappabashi, and when you think of 'branding iron,' dorayaki is the perfect match! So, I made these. I even wrote 'dorayaki' on the bags to make them look like they came from a shop, and gave them out as Tokyo souvenirs—everyone loved them! I think giving homemade gifts using things you picked up on a trip is a great idea.

In a bowl, combine the eggs and sugar, then mix in the honey. Beat the mixture until it becomes thick and creamy. (This step is the secret to making the pancakes fluffy!)

Sift together the flour and baking powder, then add to the egg mixture and mix. Add 2 teaspoons of water and mix again. Let the batter rest for about 15 minutes.

Add another 2 teaspoons of water and mix until the batter is smooth and slightly runny. (Be careful not to add too much water, or the pancakes will spread too much and won't be fluffy!)

Heat a nonstick skillet over medium-low to low heat. Pour the batter from a height into one spot to form a circle about 3 inches (8 cm) in diameter. When bubbles appear on the surface, flip and cook the other side.

Once cooked, place the pancakes on a cutting board or tray and cover with a damp cloth to cool and keep them moist. (Covering with a damp cloth gives them that signature moist texture!)

When the pancakes have cooled, spread a mound of sweet red bean paste in the center of one pancake and sandwich with another.

If you have a branding iron, press it onto the dorayaki to finish.
