[Canadian Breakfast] Secret Pancakes

In Canada, pancakes are a staple for weekend breakfasts. They're not too sweet, so you can eat as many as you like. Be careful not to overeat!!
The origin of this recipe
On weekends, my husband often makes pancakes. This recipe was passed down from his mother, and he has been perfecting it since he was a child in charge of making pancakes. We pile the freshly made pancakes high on a plate and share them with the whole family♪

Ingredients

Makes 10-12 small pancakes or 5 large pancakes
  1. 1 cup = 240 ml
  2. 1 1/3 cups(320 ml/160 g) all-purpose or cake flour, as preferred
  3. 3 teaspoonsbaking powder
  4. 3 tablespoonssugar
  5. 1/2 teaspoonsalt
  6. 1egg
  7. 1 1/4 cups (300 ml)milk
  8. 3 tablespoonsmelted margarine
  9. 1/4 teaspoonvanilla extract

Steps

    Mix the flour, baking powder, salt, and sugar together. Make a well in the center as shown in the picture.

    Crack the egg and add the milk, then mix. Add the melted margarine and vanilla extract.

    Pour the mixture from step 2 into the well of the dry ingredients from step 1.

    Using a whisk (or hand mixer), mix the pancake batter until completely smooth, ensuring no lumps remain.

    Pour 1/4 of a ladle of batter onto a heated griddle (or frying pan). When bubbles form on the surface and it turns golden brown, flip it over and cook the other side until golden brown as well.

    Once the pancakes are cooked, immediately spread margarine or butter on one side. Drizzle with maple syrup and enjoy♪
