Ingredients

  1. 2-3small red bell peppers
  2. 1 packshimeji mushrooms
  3. Olive oil for sautéing
  4. 2 1/2 tablespoonsA. mentsuyu (Japanese noodle soup base)
  5. 1 tablespoonA. vinegar
  6. 1 tablespoonA. vegetable oil
  7. 1 pinchA. salt and pepper

Steps

  1. 1

    Julienne the red bell peppers and separate the shimeji mushrooms by hand. Heat olive oil in a frying pan and sauté the red bell peppers and shimeji mushrooms. Transfer to a plate and let cool.

    In a bowl, combine all ingredients labeled A, add the sautéed vegetables, and chill in the refrigerator.

  3. 3

    Once chilled, it's ready to serve. Letting it sit for a day enhances the flavor.
