Perfect for summer! This refreshing Japanese-style marinade features red bell peppers and shimeji mushrooms. You can use other ingredients as well. The acidity is mild.

Julienne the red bell peppers and separate the shimeji mushrooms by hand. Heat olive oil in a frying pan and sauté the red bell peppers and shimeji mushrooms. Transfer to a plate and let cool.

In a bowl, combine all ingredients labeled A, add the sautéed vegetables, and chill in the refrigerator.

Once chilled, it's ready to serve. Letting it sit for a day enhances the flavor.
