Peel and slice the eggplant

Heat the oil and fry the eggplant in batches make sure the oil is very hot

Move each batch to paper towels to absorb excessive oils. The eggplant absorbs oils a lot. The eggplant will not turn crunchy unless you really overcooked it.

Add eggplant to a cooking pan sprinkle parsley

Cover with chili

Add cheese

Bake in oven 40 minutes
