At Home! Sesame Dressing Ramen Salad

Ingredients

  • 1.5 packsramen noodles (fresh or steamed)
  • as neededVarious salad vegetables from the fridge,
  • 1boiled egg, if available
  • as neededFlavorful meat like ham,
  • 1little aromatic vegetables
  • Any other suitable toppings, as you like
  • Dressing
  • 1 tablespoonsoy sauce
  • 1 tablespoonvinegar
  • 1 tablespoonsugar
  • 1 tablespoonwhite sesame seeds (ground sesame is also fine)
  • 1 tablespoonsesame oil
  • 1 tablespoonmayonnaise

Steps

  1. 1

    Mix all the dressing ingredients.
    In the order of white sesame seeds → sugar → mayonnaise → sesame oil → soy sauce → vinegar. (From granular → gel-like → oil → liquid. Pay attention to the viscosity)

  2. 2

    Cut the vegetables into bite-sized pieces.
    Use any leftover tomatoes, cucumbers, lettuce, bell peppers, bean sprouts... anything is OK!

  3. 3

    Cut the aromatic vegetables as well.
    Choose from shiso leaves, myoga, ginger, etc.

  4. 4

    Cut the ham into matchsticks. Slice imitation crab diagonally. Quickly boil shrimp and sprinkle with salt. Use whatever you have.
    At home, we use leftover tatsuta-age.

  5. 5

    Boil fresh noodles until slightly softer than al dente, then cool in ice water. Drain well and toss with a little sesame oil (not included in the ingredient list).

    If using steamed noodles, quickly rinse with hot water to loosen, then cool in ice water and toss with sesame oil.

  7. 7

    Pile the noodles in the center of a large plate, surround with leafy greens and colorful vegetables. Arrange animal-based toppings on top of the noodles.
    Feel free to arrange as you like.

    Drizzle the mixed dressing over the visible parts of the noodles to finish.
    Serve at the table!

    Another example: a single serving with 0.75 pack of noodles. Less sugar + seasoned with doubanjiang. Lettuce, mizuna, cucumber, cherry tomatoes, imitation crab & Peking duck.
