My recipe for slow cooker shredded BBQ chicken, using a homemade sauce. The thing I love about this, is that you control the ingredients for the BBQ sauce. If you like it sweeter, then increase the honey. If you like it tangier, then increase the vinegar. If you like it spicy, then add more hot sauce and some cayenne pepper. Don't leave out the liquid smoke though, it is essential for that classic BBQ taste. As is, this sauce has a little taste of everything.

Ingredients

  1. 1 lb.boneless, skinless chicken breasts
  2. 1 can (8 oz.)tomato sauce
  3. 2 clovesgarlic, minced
  4. 3 tbsp.apple cider vinegar
  5. 3 tbsp.honey
  6. 2 tbsp.brown sugar
  7. 1 tbsp.Worcestershire sauce
  8. 2 tsp.liquid smoke
  9. 1 tsp.smoked paprika
  10. 1/2 tsp.salt
  11. 1/2 tsp.garlic powder
  12. 1/4 tsp.pepper
  13. 1/4 tsp.onion powder
  14. dashhot sauce (I used Louisiana hot sauce)
  15. 1 tbsp.cornstarch
  16. 2 tbsp.water

Cooking Instructions

    In a medium bowl, whisk together all ingredients (except for the cornstarch and water) to make your BBQ sauce. Taste and adjust it to your liking.

    Lightly grease your slow cooker. Spread about 1/4 of the BBQ sauce over the bottom.

    Place the chicken breasts into the slow cooker and cover with the remaining sauce.

    Cover and cook on high for 3-4 hours OR cook on low for 6-7 hours.

    Once chicken is ready, it should be falling apart. Remove from the slow cooker and set on a cutting board to rest for 5 minutes. Whisk together the cornstarch and water and stir it into the liquid in the slow cooker.

    Using 2 forks or your fingers, shred the chicken, then return the shredded chicken back into the slow cooker. Cover and cook on low for another 30 or so minutes.

    Serve immediately. Refrigerate any leftovers.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
