You can easily make this with pancake mix! I created this recipe because I had some leftover sweet red bean paste (anko).

You can easily make this with pancake mix! I created this recipe because I had some leftover sweet red bean paste (anko).

Whisk together the mirin, soy sauce, honey, egg, and sugar in a bowl.

Add the pancake mix to the bowl and gently mix. Gradually add milk until the batter is thick but pourable.

Lightly heat a nonstick skillet and use a paper towel to spread a thin layer of oil.

Once the skillet is warm, briefly place it on a damp cloth, then return it to low heat.

Pour about 1 tablespoon of batter onto the skillet for each pancake. When the bottom is golden brown, flip it over.

After flipping, gently press the surface to flatten slightly.

Once cooked, remove from the skillet and sandwich sweet red bean paste between two pancakes to finish.
