Slice the tofu thinly and drain it well using paper towels. (If you have time, prepare this step early.) Season the pork with salt and pepper.

Coat the drained tofu thoroughly with potato starch. (The tofu is very soft, so handle gently.)

Wrap the pork around the tofu, dip in the egg beaten with milk, then coat with panko breadcrumbs.

Fry in about 1/2 inch (1.5 cm) of oil until crispy, letting the moisture cook off.
