Next-Day Pork Cutlet Bowl (Katsudon)
Turn leftover tonkatsu into a super easy egg-topped katsudon!
About this recipe:
This is one of the recipes my mom taught me. It reminds me of the times she’d make it for my lunch, especially when pork cutlets were on sale.
Steps
- 1
Thinly slice the onion. Cut the pork cutlets into bite-sized pieces if needed.
- 2
In a saucepan, combine the water, dashi, soy sauce, sugar, sake, and mirin. Add the onion and pork cutlets, and simmer until the onion is tender. Reduce the heat slightly.
- 3
Add the pea shoots, then pour the beaten eggs evenly over the top. Cook until the eggs reach your desired doneness.
- 4
If using green onions, serve the katsudon in bowls and sprinkle the green onions on top.
- 5
Photo updated! Here’s how it looks with the pea shoots version.
