In this recipe y use avocados, tomatoes and olives , which were the vefgies I had at home, but i can imagine adding sweetcorn and cucumber couls make it more delicious

Place the couscous in a bowl, add a teaspoon of salt. Pour over 1.2 times its volume of boiling water. Stir well, cover and leave to stand for 5 minutes.

Chop the tomatoes olives and avocados
- 3
Check the couscous, and when it is cooked, leave it 10 min for chill.

When the couscous is chilled and ready mix everything.in a big bowl. Add olive oil and any desired dressing like e.g. balsamic vinegar
