I created this recipe because I wanted my daughter, who dislikes shiitake mushrooms, to enjoy them. The flavor is not too strong, so it pairs well with other ingredients in sushi rolls or chirashi sushi.

Place the dried shiitake mushrooms in a bowl and soak them in plenty of lukewarm water. Cover tightly with plastic wrap to ensure even soaking.

Once rehydrated, cut off the stems. Add the seasonings marked with ● to a pot, add the squeezed shiitake mushrooms, cover with a drop lid, and simmer over medium heat.

Simmer for about 20 minutes until the liquid has reduced significantly, then turn off the heat and let the pot cool completely.

If the mushrooms have absorbed the remaining liquid and are plump, they are ready to serve!
