Chikuwa and Edamame Mayo Cheese Bites

When you grill or fry chikuwa, it becomes sweeter and more delicious. Paired with edamame and cheese, this makes an amazing appetizer! Just 3 minutes in the toaster oven.

Ingredients

Makes 4 pieces
  • 2chikuwa (Japanese fish cakes)
  • About 24 edamame beans (shelled)
  • About 2 teaspoons mayonnaise
  • as neededShredded melting cheese,

Steps

  1. 1

    Slice the chikuwa in half lengthwise to make a boat shape. Squeeze or spread mayonnaise into the hollow center.

  2. 2

    Place the edamame beans along the hollow on top of the mayonnaise, then sprinkle with shredded cheese.

  3. 3

    Toast in a toaster oven at 1200W for 3 minutes, until the cheese is melted and golden.
