I made tempura with the season’s first Manganji peppers and green beans, two of my favorites.
Steps

Make a small slit in each Manganji pepper. Trim the stems off the green beans.

Place the peppers and green beans in a plastic bag and dust with all-purpose flour.

Mix the tempura batter mix with a little potato starch to make the batter.
- 4
Dip the floured vegetables into the batter, then fry in oil at 350°F (180°C) until golden. Drain well and serve.
