Ingredients

Serves 2 servings
  • 1/4 head(about 7–8 oz or 200–230 grams) cabbage
  • As much as you like green onions
  • 4–6 slices thinly sliced pork belly
  • 3/4 cup (100 grams)all-purpose flour
  • 1/2 tablespoondashi powder
  • 1large egg
  • 1/2 cup (120 ml)water
  • As much as you like tempura bits (tenkasu)
  • as neededOkonomiyaki sauce,
  • as neededMayonnaise,
  • as neededBonito flakes, aonori (dried seaweed),

Steps

  1. 1

    Shred the cabbage and thinly slice the green onions.

  2. 2

    Mix the ingredients marked with ◯ (flour, dashi powder, egg, water, tempura bits) together. Add the cabbage and green onions, and mix until just combined.

    Heat a frying pan and add oil. Spread the batter in the pan and start cooking.

  4. 4

    Place the pork slices on top. When the bottom is golden brown, flip it over.

    Cover with a lid and cook until the inside is fluffy and cooked through.

    When the pork is crispy, flip it again to let the pancake absorb the pork fat.

    Top with okonomiyaki sauce, mayonnaise, bonito flakes, and aonori to finish.

    (Optional) For a decorative finish, drizzle plenty of sauce and draw parallel lines of mayonnaise. Drag a toothpick in one direction to create a pretty pattern.
