Ingredients

Makes 4 pieces
  1. 2chikuwa (Japanese fish cakes)
  2. 4 slicesbacon (halved)
  3. 12edamame beans (thawed if using frozen)
  4. as neededMayonnaise,

Steps

  1. 1

    Cut each chikuwa in half, then make a lengthwise slit in each piece to create a pocket for the edamame.

  2. 2

    Spread mayonnaise inside the slit and place 3 edamame beans in each piece.

  3. 3

    Wrap each piece with a slice of bacon, place seam side down, and bake in a toaster oven for 5–6 minutes.
    *Watch carefully to avoid burning. Adjust baking time as needed.

  4. 4

    You can substitute asparagus for the edamame. I cut them in half to fit in a bento box.
