Ingredients

4 servings
  • 1-1/2 clightly packed fresh cilantro
  • 1/4 cwater
  • 2 Tlime juice
  • 1 tspground cumin
  • 1/2 tspsalt
  • 1/4 tspblack pepper
  • 1/4 tsphot pepper sauce
  • 1 lbsalmon steak, cut into 4 portions
  • 1yellow bell pepper, cut in strips
  • 1red bell pepper, cut on strips

Steps

  1. 1

    Combine first seven ingredients in food processor or blender and puree. Transfer to large zip-top bag. Add in salmon and marinate in refrigerator for 30 min.

  2. 2

    Preheat oven to 400°F. Spray 9" baking dish with cooking spray. Layer pepper slices and bake 15 min, turning once.

  3. 3

    Remove salmon from marinade, discard marinade. Place salmon on top of peppers and bake until done, about 5 min each side.
