Slice the chicken breast into bite-sized pieces (about the size of chicken nuggets). Marinate in a mixture of sake and soy sauce (about a 4:1 ratio).

Coat the chicken pieces with potato starch. Heat a generous amount of oil in a frying pan and cook the chicken until golden brown.
Tip: If making a large batch, put the chicken and starch in a plastic bag and shake to coat quickly! - 3
Add the ketchup and Worcestershire-style sauce to the pan and toss to coat the chicken well. Finish by adding butter and black pepper.
