I always end up buying 1 kg of chicken breast when it's on sale. I cut it into bite-sized pieces and soak it in sake and soy sauce to keep it fresh, so I can add it to bento boxes every day! Coat with potato starch and pan-fry until golden. You can change up the flavor with sweet and savory sauces, oyster sauce, ketchup, or sweet vinegar—highly recommended!

Ingredients

Makes 3–4 bento servings
  1. 1chicken breast (about 7–9 oz or 200–250 grams)
  2. As needed◎ Sake and soy sauce (for marinating the chicken)
  3. As needed◎ Potato starch (or cornstarch)
  4. 3 tablespoons★ Ketchup (about 45 ml)
  5. 1 1/2 tablespoons★ Worcestershire-style sauce (about 22 ml; use half the amount of ketchup)
  6. 1 pincheach ★ Black pepper and butter

Steps

  1. 1

    Slice the chicken breast into bite-sized pieces (about the size of chicken nuggets). Marinate in a mixture of sake and soy sauce (about a 4:1 ratio).

    Coat the chicken pieces with potato starch. Heat a generous amount of oil in a frying pan and cook the chicken until golden brown.
    Tip: If making a large batch, put the chicken and starch in a plastic bag and shake to coat quickly!

    Add the ketchup and Worcestershire-style sauce to the pan and toss to coat the chicken well. Finish by adding butter and black pepper.
    Tip: Lower the heat to prevent burning.
