Spicy Pork Shabu-Shabu Chilled Udon
Enjoy chilled udon noodles topped with spicy pork shabu-shabu flavored with doubanjiang. The spicy kick makes it extra appetizing!

Slice the green onion diagonally into thin pieces.

Boil the pork slices in hot water, then transfer to room temperature water to cool. Pat dry with paper towels.

In a bowl, combine the pork and green onion. Season with the ingredients marked with * (soy sauce, doubanjiang, sugar, vinegar, sesame oil, garlic, and sesame seeds).

Cook the udon noodles in plenty of boiling water according to package instructions or to your preferred firmness. Rinse quickly under plenty of cold water and drain well.

Mix the ingredients marked with ◎ (mentsuyu and cold water) together.

Place the udon noodles in serving bowls, pour the sauce over, and top with the pork mixture from step 3.
