Ingredients

20 cookies
  • 100 g(about 7 tablespoons) butter
  • 80 g(about 1/3 cup) brown sugar
  • 1egg
  • 3 dropsvanilla extract
  • 1/4 teaspoonbaking soda
  • 1 tablespooncocoa powder (optional)

  • 140 g(about 1 cup) all-purpose flour
  • 80 g(about 1/2 cup) chocolate chips
  • The sugar is reduced, so be careful not to reduce the chocolate, or it may lack flavor

Steps

    Microwave the butter until melted. If using unsalted butter, add a pinch of salt. Add the ingredients one by one in the order listed, mixing well each time.

    Add the all-purpose flour (no need to sift) and mix until just combined. Add the chocolate chips. Chill in the refrigerator for 1 hour. ★Reference

    Tear the dough into small pieces (consider that they will spread to twice their size when baked) and flatten to 1/2 inch thick. Bake in a preheated oven at 350°F for 7 minutes.

    The center will puff up, so after 7 minutes, remove from the oven and press down the center with a spoon. Do not move it side to side, just press down neatly.

    Return to the oven and bake for another 3 minutes (or 5 minutes if you want a crunchier outside). Let cool on the baking sheet to finish cooking with residual heat.

    ★If chilling is a hassle, use two spoons to drop the dough onto the sheet and press to 1/2 inch thick.

    Pressing down prevents the center from being undercooked and gives a nice texture. It creates a cute shape like Country Ma'am cookies.

    For a variation, embed marble chocolate without cocoa. Press down before baking to prevent the chocolate from being crushed.

    ❤Brown sugar hardens after opening, so roll it up, remove the air from the bag, and store it in a sealed zip bag.
