Coconut Almond Cookies with Marshmallows

Super easy with marshmallows! These delicious coconut almond cookies have a toasty, sweet aroma, reminiscent of Florentines or tuiles.

A few years ago, I received a recipe at kindergarten for a treat made by mixing marshmallows and butter with cornflakes. I tried to modify it and failed, but I was determined to make it work. Eventually, I succeeded and was surprised at how delicious it turned out! So, I made it into a recipe!

A few years ago, I received a recipe at kindergarten for a treat made by mixing marshmallows and butter with cornflakes. I tried to modify it and failed, but I was determined to make it work. Eventually, I succeeded and was surprised at how delicious it turned out! So, I made it into a recipe!

Preheat the oven to 340°F (170°C). Place the marshmallows and butter in a small saucepan and heat. Stir with a spatula to melt, being careful not to burn.

It will gradually melt~♪

Once there are no lumps, it's ready. Remove from heat.

While still hot, add the shredded coconut and sliced almonds, and mix to coat everything evenly.

On a baking sheet lined with parchment paper, lightly wet your fingertips with water and pinch off pieces about 1-1.2 inches (2-3 cm) in size. Gently press the tops with your fingers to flatten slightly.

They will spread out when baking, so make sure to space them apart! It's better to space them more than shown in step 5's photo.

Bake at 340°F (170°C) for about 10-15 minutes. Keep an eye on them to prevent burning. They're done when the edges are colored and they've spread out flat.

They are soft when freshly baked but will harden quickly. After a short while, you'll have crispy, crunchy cookies!

I tried to shape them like tuiles, but it's difficult unless you work quickly. I gave up halfway through (laughs).

They have a caramel-like flavor similar to Florentines, with a light, crispy texture. The coconut and almonds are wonderfully fragrant and delicious!
