Peel the apple. Remove the core and cut it into 1/8 to 1/4 inch thick slices.

Place the apple slices in a large microwave-safe bowl, add sugar and lemon juice, cover loosely with plastic wrap, and microwave at 500W for 4 minutes.

Take the bowl out, stir the contents, remove the plastic wrap, and microwave for another 2 minutes. Check and microwave for an additional minute if needed.

Remove from the microwave, let it cool slightly, then transfer to a storage container and refrigerate.
