When I made bologna sausage into piccata, it was seriously delicious! Cut it into easy-to-eat sizes for lunchboxes too! Ingredients

Serves 2 servings
  • 4 slicesbologna sausage (1 cm thick)
  • 1 pinchsalt
  • 1 pinchcoarse black pepper
  • as neededFlour,
  • 1egg
  • 1 1/2 teaspoonsgrated Parmesan cheese
  • 2 tablespoonsolive oil
  • as neededVegetables of your choice,
  • as neededKetchup,

Steps

    Season the bologna sausage with salt and coarse black pepper, coat it with flour, and let it sit for a while.

  2. 2

    In a bowl, beat the egg and mix in the grated Parmesan cheese, then add the sausage from step 1 and coat it with the egg mixture.

  3. 3

    Heat olive oil in a frying pan and cook the sausage from step 2 over medium-low heat until both sides are golden brown.

  4. 4

    Serve the sausage with your choice of vegetables on a plate and enjoy with ketchup.
