Soufflé Pancakes with a Ricotta Feel (Using Pancake Mix)

Soufflé Pancakes with a Ricotta Feel (Using Pancake Mix)

Ricotta cheese can be expensive and hard to find when you want pancakes on a whim, so I made these with yogurt instead. Highly recommended! If you make these for someone, they’ll love it. It feels just like a café treat—perfect for a party!
Steps

Separate the egg yolk and egg white.

In a bowl, mix the egg yolk. Add the yogurt and pancake mix, and mix well. Add the vanilla extract and mix again.

In a separate bowl, add a pinch of salt to the well-chilled egg white. Beat with a whisk on high speed until stiff peaks form to make a meringue.

Add half of the meringue to the yolk mixture and gently fold in. Add the remaining meringue and fold in lightly—do not overmix to keep it fluffy.

Heat a frying pan and add the butter. Divide the batter into three portions and cook over low heat for about 2–3 minutes on one side.

When the edges start to dry out a bit, flip the pancakes with a spatula. Unlike regular pancakes, you won’t see bubbles forming on the surface.

Once both sides are golden brown, they’re ready. Enjoy them hot off the pan.

If you don’t have pancake mix, you can use 50 grams (about 1/3 cup) all-purpose flour sifted with 2 grams (about 1/2 teaspoon) baking powder instead.

Top the finished pancakes with honey, maple syrup, butter, ice cream, whipped cream, or fruit as you like.

Recently, I’ve been using ready-to-use whipped cream for convenience.
