Fluffy One-Egg Butter Rice Omurice
This is quick and easy to make! It’s definitely tastier than ketchup rice.
Recipe background:
Even without sauce, just ketchup is delicious enough! Lately, I actually prefer it with just ketchup, haha.

Steps
- 1
If you don’t have granulated bouillon, wrap a bouillon cube in plastic wrap and microwave for about 1 minute to soften, then crush it into powder by hand.
- 2
It will harden as it cools, so crush it first. If it’s been stored in the fridge, it may need more than 1 minute—adjust the time as needed.
- 3
Be careful not to overheat, or the plastic wrap may break and make a mess in the microwave!
- 4
Finely chop the onion and cut the sausages into your preferred size.
- 5
Add 1 1/2 tablespoons (20 grams) butter and the sausages to a skillet over low heat. Sauté briefly, then add the onion. Keep the heat low so the butter doesn’t burn!
- 6
When the onion is cooked through, add the rice. Once mixed, add the bouillon and mix well. Season with freshly ground black pepper to taste.
- 7
Add the finishing butter (2 teaspoons/10 grams), turn off the heat, and mix well. Plate the butter rice.
- 8
Beat the egg with the milk. Add oil to a skillet, pour in the egg, and gently scramble until just set but still soft. Remove from heat while still slightly runny.
- 9
Slide the egg over the rice.
- 10
For the sauce, add all sauce ingredients to the skillet and bring to a gentle simmer. Adjust the thickness to your liking!
- 11
When making the egg, pour it into the skillet so it doesn’t spread too much. Once the edges set, slide it onto the prepared rice for a neat finish.
- 12
The photo at the top of the recipe was made using this method! The egg stays fluffy and soft without overcooking. Cook the egg over low heat.
